Home Baked... Kitchen

Mascarpone and Espresso Cake
(Tiramisu)

Ingredients:
3 egg yolks
5 tablespoons sugar
1 pound mascarpone cheese
1 cup espresso
3 ounces brandy
3 dozen lady fingers
1 tablespoon cocoa powder
3 ounces crushed biscotti

Directions:
In a mixing bowl, beat he egg yolks with the sugar. Add the cheese and mix well. In another bowl, mix together the espresso and brandy.

Soak 1 lady finger in the brandy-espresso mixture at a tim; let excess drip off and place in a deep serving dish. Top evenly with the mascarpone mix. Repeat the process until all of the lady fingers and mascarpone mix have been used. Sprinkle with cocoa powder and top with biscotti. Refrigerate for about 2 hours. For best results, make the tiramisu 4 hours prior to serving and refrigerate.
