Pears Belle Hélène
(Cinnamon Poached Pears in a Vanilla Ice Cream)

March 15th is National Pears Hélène Day
Ingredients:
- 1 1/2 cups sugar
- 2 cinnamon sticks
- 2 whole cloves
- 6 pears, peeled and cored
- 6 scoops vanilla ice cream
- 1 cup callebaut chocolate
- 6 strawberries, fanned
Directions:
- Combine the sugar, cinnamon, and cloves in a large pan with 3 cups water, stir over low heat until the sugar dissolves, then bring the syrup to a boil.
- Add the pears and simmer for 10 minutes, or until tender
- Remove the pears with a slotted spoon and leave to cool
- Place the chocolate in a bowl and over a double boiler until melted, blend
- Put a scoop of ice cream in each serving bowl and make a hollow in each scoop with the back of the spoon. Stand the pears in the hollow and drizzle chocolate sauce over
- Garnish with a fanned strawberry. To make a fanned strawberry simply make slices through the strawberry 1/8 of an inch across and 3/4 of the way down the berry. Press with your thumb across the top of the berry to fan
