Pears Belle Hélène
(Cinnamon Poached Pears in a Vanilla Ice Cream)

March 15th is National Pears Hélène Day

Ingredients:
  • 1 1/2 cups sugar
  • 2 cinnamon sticks
  • 2 whole cloves
  • 6 pears, peeled and cored
  • 6 scoops vanilla ice cream
  • 1 cup callebaut chocolate
  • 6 strawberries, fanned
Directions:
  1. Combine the sugar, cinnamon, and cloves in a large pan with 3 cups water, stir over low heat until the sugar dissolves, then bring the syrup to a boil.
  2. Add the pears and simmer for 10 minutes, or until tender
  3. Remove the pears with a slotted spoon and leave to cool
  4. Place the chocolate in a bowl and over a double boiler until melted, blend
  5. Put a scoop of ice cream in each serving bowl and make a hollow in each scoop with the back of the spoon. Stand the pears in the hollow and drizzle chocolate sauce over
  6. Garnish with a fanned strawberry. To make a fanned strawberry simply make slices through the strawberry 1/8 of an inch across and 3/4 of the way down the berry. Press with your thumb across the top of the berry to fan
