Begin with the freshest Mahi Mahi you can find. It should have a beautiful pink-like appearance. Truly fresh fish will not have a fishey smell. This simple preparation will trult compliment this wonder fish.
Mahi Mahi with Basil Butter
Ingredients:
4 mahi mahi fillets (about 2lbs total)
Basil Butter:
8 oz. Butter
1/2 cup Basil (chopped-fresh)
Marinade:
1 Cup Olive Oil
1/4 Tsp. Ground White Pepper
1/4 Tsp. Salt
1/4 Tsp. Garlic Powder
Juice from 1 Lemon
Directions:
Marinate your mahi mahi for one hour at room temperature.
Grill your marinated mahi mahi for 4-5 minutes on each side.
Prepare some Basil Butter to serve with your mahi mahi.
Using a food processor cream the butter with the basil put in a dish and serve with mahi mahi.
